Does anyone know, or have a way to check - if a captured block retains the original signal polarity / phase ?
For example; if I capture a piece of equipment which inverts the polarity of the signal, will the capture block also invert the polarity of the signal? Or will I have to invert the phasing myself after the fact? (By using a gain block etc)

I take it you mean–that an overdrive pedal or an amplifier may invert signal polarity (directly from what it sees from the guitar), right? And you’re asking whether or not the capture of that piece of hardware maintains the same polarity?
May I ask, what is the bigger context for this question? What are you trying to do?
In any case, if you need to switch signal polarity, the Phase Doctor block can do that for you very easily.

Yeah that’s what I mean; I’ve been trying to recreate an analogue signal chain of mine and I’m almost there, the original chain was a parallel blend of two signals, one of which included an overdrive which flipped the signal polarity, when combined with my other signal this resulted in a VERY pleasing sound, seemed like the frequencies were sculpted in a nice way. With my captures sounding identical I’m just not sure they are gelling in the same way as the originals,
I’ll definitely try more experimentation and will give the phase doctor a go
